Vegan banana loaf

How often do you find bananas in the fruit bowl passed their best? This recipe uses them up and creates a lovely, easy to make vegan loaf. A slice of banana bread is perfect with mid-morning coffee or included in a packed lunch.

Ingredients

4 medium sized, ripe bananas, peeled and chopped.

50mls sunflower or rapeseed oil

50mls Oat Drink

90g light brown sugar

2 tsp vanilla extract

240g plain flour

1 tsp cinnamon

1 tsp baking powder

1/4 tsp salt

Pearl/ nib sugar for decorating (optional)

Before you start

Preheat the oven to 350F/180C/160C Fan. Line a loaf tin (16cm long, 11cm wide and 7cm high) with non-stick baking parchment.

Method

Roughly mash the bananas in a large mixing bowl using a fork. Stir in the oil, Oat Drink, brown sugar and vanilla essence. Stir well until all the ingredients are mixed together thoroughly. These are the wet ingredients.

Sift the flour, cinnamon and baking powder into another bowl and add the salt. These are the dry ingredients.

Now add the wet ingredients to the dry ingredients and mix together using a wooden spoon to form a batter.

Transfer the batter to the prepared loaf tin and scatter nibbed sugar over the surface. Place the cake in a hot oven for 45 minutes, then cover with foil and bake for 5-10 minutes longer or, until a skewer inserted in the centre comes out clean.
