Peach smoothie with raspberry sauce

Summer is the time of year when beautiful, soft, sweet, ripe peaches become available. They are delicious to eat as they are but they are also fabulous to use in drinks, salads and puddings too. This recipe for a lovely fresh tasting smoothie is ideal for breakfast or a refreshing, nutritious snack.
Serves 2
Ingredients
2 ripe peaches
1 banana (frozen if possible)
400 ml Oat Drink
1 tbsp lemon juice
1 tsp vanilla essence
200 g raspberries
splash of cool sparkling mineral water
Method
Cut the peaches in half and remove the stone. Roughly chop the peach halves but reserve a a few slices for serving with the smoothie. Place the peaches, banana, Oat Drink, lemon juice and vanilla essence into a blender and processes until smooth. Divide the smoothie between two glasses, leaving a little space for the raspberry sauce.
Place the raspberries and mineral water in a blender or liquidiser. Process until the raspberries and water form a runny sauce. Pour some sauce over the peach smoothie and swirl the layer of sauce into the top of the peach smoothie without mixing it in completely. Decorate with some peach slices and serve.
