Pancakes with winter fruit compote

Serves 4

Ingredients

For the winter fruit compote

300g dried fruit including, prunes, apricots, figs, dried cranberries etc

100ml fresh orange juice

200ml hot water

1 star anise

For the pancakes

110g plain flour, sifted with a pinch of salt

1 egg

1 egg yolk

290ml Oat Drink

Method

To make the compote: slice the larger pieces of dried fruit and place in a bowl with the rest of the fruit. Gently warm the orange juice and water and add the star anise. Pour the orange juice and water over the dried fruit and leave to soak for two to three hours.

To make the pancake batter: place all the ingredients for the pancake batter into a liquidiser for a few seconds and blend until the ingredients are smooth and resemble the consistency of single cream. Pour the pancake batter into a jug and place in the fridge for about half an hour. This allows the starch grains in the flour to swell and produces a lighter batter.

Prepare a non stick frying pan by heating well and wiping the surface with a little oil. When the pan is ready pour about one tablespoon of batter into the pan and swirl about until evenly spread across the bottom. Cook the pancake for about two minutes and using a palette knife to help, flip the pancake over and cook for another two minutes until the pancake is golden brown.

Place a tablespoon of fruit compote in the centre of each pancake and fold over. Serve with vanilla ice-cream or Greek yogurt.
