To achieve a really smooth texture you can replace butter and milk with Oat Drink and a little olive oil. A sprinkle of grated cheese and a dribble of olive oil will help to make the topping crisp and golden.
600g potatoes, peeled
2 tbsp chives, chopped
150ml Oat Drink
1 – 2 tbsp olive oil
sea salt and freshly ground black pepper
50g grated hard cheese e.g. mature cheddar, Gruyere
Cut the potatoes into large chunks and boil or steam them until very soft and beginning to break up. Drain the potatoes and allow them to cool a little before mashing with a potato ricer. This will help to create a smooth texture.
Preheat the oven to 220C (425F/Gas 7). Mix 1 tbsp of chopped chives into the potatoes together with 150ml of Oat Drink and a dribble of olive oil. Add more Oat Drink if you need to loosen the texture of the potatoes. Season the potatoes with sea salt and freshly ground black pepper and mix well.
Transfer the mashed potatoes to an oven proof dish and sprinkle with the remaining chives and grated cheese. Use a fork to create ridges on the top of the mashed potato and place in the preheated oven. Cook for 15 minutes or until the top of the potatoes is golden brown.
