Beet Burger

This stunning recipe for beet burgers is perfect if you fancy an alternative to meat. Its vibrant colour will certainly attract a lot of attention. To get a griddled look to your burger buns place them crust sides down on the rack of a griddle pan or BBQ rack for a few minutes to warm through and develop attractive lines.

Makes 6-8 burgers


4 small beetroots, scrubbed and peeled if necessary
1 small onion

2 cloves garlic, peeled

2 tbsp olive oil (plus extra oil for frying the burgers)
2 eggs, lightly beaten 

100g rolled oats
150g feta cheese, crumbled
1 handful fresh basil, chopped or torn

To serve:
yellow pepper, grilled, skins removed and sliced
avocado, sliced
tomatoes, sliced
onions, sliced

1-2 bread rolls per person, cut in half and warmed slightly before serving


Grate the beetroots, onion and garlic using the grating blade of a food processor or box grater. Place the grated vegetables into large mixing bowl and add the eggs, oats and olive oil and mix well. Add the feta and basil and season well with pepper and salt. Set aside this mixture for half an hour so the oats can absorb the liquid and the mixture becomes stiff enough to form into burgers. Form 6-8 burgers with your hands and flatten slightly so they cook through evenly.

Heat a little olive oil in a large frying pan and fry the beetroot burgers until they are golden on both sides. Serve in a bread roll with slices of avocado, tomatoes, grilled pepper and onions and a squeeze of mayonnaise if you like.
