Anything on toast is welcome if you are hungry and need to feed children quickly. Good quality sourdough bread that is a few days old is ideal for making into a crisp nutritious platform onto which you can smear quickly made pates or spreads. Avocadoes are wonderfully convenient for this as they squish up quickly and can be made into either sweet or savoury toppings. Toast is good to eat with milky drinks and provides one of the bests snacks around.
Serves 4
Ingredients
4 slices of sourdough or granary bread
2 ripe avocadoes
1 clove of garlic, peeled
juice of 1 lime
½ mild green chilli, chopped finely or Tabasco sauce to taste
1 tbsp chopped coriander
Sea salt and freshly ground black pepper
Method
Heat a griddle and when hot toast the bread until it is golden brown or place in a toaster if it is easier. Meanwhile halve the avocadoes and remove their stones. Use a dessert spoon to scoop out the green flesh of the avocado taking care to scrape the bright green silky flesh from the skin. Add the green chilli to the avocado if using. Mash the avocado in a bowl with salt and pepper and gradually add the lime juice to taste. Taste and adjust the seasonings to your palate. Spread the avocado over the toast and serve sprinkled with coriander.
